Squash – Part 2

First of all, I’m even annoyed at myself that there are multiple parts to squash.  Other than carving up a pumkin, I don’t think I want to deal with sqaush again anytime soon.  And, yet, I have a sneaking suspicion that I’m going to be getting more of the stuff in my CSA box on Tuesday.  UGGGG.

You all don’t know me well, yet, so I need to give you just a bit of background.

I COOK.

I do NOT bake.

Okay, there I said it.  Want me to sear a leg of lamb or make you black and blue tuna.  No problem.  Ask me to make cookies from scratch and we have some problems.  See, I’m not great at following directions when it comes to food.  Measuring bores me.

That said, I took all of that squash that I had roasted from the other night and made a delicious bread.  Amazing, considering that I left out a few ingredients, and didn’t measure properly.

Looks good, doesn’t it!

I did learn some good lessons too… which I think is always important.

1. Cornstarch + granulated sugar does NOT make powdered sugar.

2. If I’m going to be spontaneously baking, I need to stock up on baking powder.

3. My kids will eat lumpy squash bread if there is enough cinnamon and if I call it pumpkin bread.
