Triple Chocolate Bundt Cake

When I do something I tend to go all out … you know, like jumping into the food blogging world with the promise of writing 5 posts a week (what!) PLUS a membership to my local food blogging group AND singing up for a weekend getaway to learn more about this whole food blogging thing (I’m; going camping this weekend!  WHAT!  CAMPING!).

You know, just a little something I do on the side.

Ya, right.

Anyway, when the FBLA said they were having a meeting and we should bring something in honor of Mother’s Day I knew I was going to bring a bundt cake.  And since I’ve already talked about my mother’s AMAZING sour-cream chocolate chip one, I figured I would go ALL OUT and make the chocolatey one that everyone loves so much.

Now, let me tell you a few things about my mother before you dive into this AMAZING chocolate cake….

1. My mother cooked and baked A LOT.  I even remember her getting up early in the mornings so that we would have freshly baked muffins for breakfast.  Sure she did it only to show us  that Brent’s mom wasn’t the only super-mom, but still.  She woke up before everyone else and we all woke up to the smell of blueberry muffins.

2. My mother is amazing at entertaining.  Dinner parties, cocktail parties, Passover sedars with 60 people (two nights in a row!)  She has it down to a science from laying out the buffet table the day before to labeling her butler’s pantry.  It’s all organized and feels effortless to all of the guests (which is really 1/2 of the battle for any party).

3. My mother is also from the semi-homemade generation.  You know, find a few grocery store short cuts, doctor them up, garnish and voila!  {Now, I’m all for this except when it comes to some sketchy ingredients…} And she is constantly reminding me that I grew up on those very foods with weird things in them – like food coloring and American Cheese (can it even be called “cheese”?) and boxed cake mixes.

4. She is – and always will be – AMAZING.

So, here’s the cake that I grew up on and loved.  The cake that I now cringe every time I make it.  And the cake that I will never – not even a little – try to change.

Triple Chocolate Bundt Cake

Ingredients

  • 1 pkg. Chocolate Cake Mix (the more basic, the better)
  • 1 pkg. (4 oz) instant chocolate pudding mix
  • 1 bag chocolate chips (I use the best quality here)
  • 1 3/4 c. whole milk
  • 2 eggs, beaten
  • 1 tsp. vanilla extract

Instructions

  1. Preheat oven to 350 degrees.
  2. In a large bowl combine cake mix, pudding mix and chocolate chips.
  3. In a separate bowl combine milk, eggs and vanilla.
  4. Add egg mixture to dry mixture and mix by hand until just blended.
  5. Pour into a prepared bundt pan.
  6. Bake for 50-55 minutes until a toothpick comes out clean.
  7. Cool in pan for 15 minutes.
  8. Remove from pan and cool completely before topping with glaze.
  9. The unglazed cake can also be wrapped and frozen for later.
  10. Enjoy!

Chocolate Glaze

Ingredients

  • 2 c. sifted confectioner's sugar
  • 2 Tbsp. cocoa
  • 1 Tbsp. butter, softened
  • 1/2 t. vanilla extract
  • 4 Tbsp. milk

Instructions

  1. Mix all of the ingredients together until combined.
  2. Add more milk if necessary for correct consistency.
  3. Pour over chocolate bundt cake.
  4. Lick bowl.
  5. Enjoy!

  • Dump out cake mix
  • Dump out pudding mix
  • Dump out chocolate chips
  • Crack & beat eggs
  • Measure out milk & vanilla
  • Stir to combine
  • Pour into bundt pan

  10. When I came here I assumed you’d be using the chocolate pudding as the glaze like I do but this looks good too. I have picky eaters here too one son who will not taste anything that has cinnamon in it even! I mean I get it on the veggies & all that but come on it’s cinnamon.
